CRANBERRY OAT COOKIES

Ingredients:

  • ¾ cup of butter, softened
  • 1 cup of packed brown sugar
  • 1/3 cup of granulated sugar.
  • 1 egg
  • 2 tablespoons of water
  • 2 teaspoons of vanilla
  • ¾ cup plain flour
  • ¾ tsp bicarbonate of soda
  • 1 tsp of cinnamon
  • 3 cups of oats
  • 1 cup dried cranberries
  • ½ a cup of white chocolate chips.

METHOD

  1. Cream butter, sugars, egg water and vanilla until light and creamy.
  2. Combine flour, baking soda and cinnamon. Add to creamed mixture until fully blended. Stir in oats, cranberries and white chocolate chips.
  3. Drop heaped dessert-spoonfuls onto greased baking sheets. Bake at 180 degrees until golden brown at the edges. Cool on a wire rack. 
  4. Give away or enjoy!
